The plums are grown and harvested in Aquitaine, following the specifications of French Organic Agriculture. It is a specific variety of plum, the Ente plum, which once pitted and dehydrated becomes an Agen prune. The recovered pits are cold-pressed to produce vegetable oil: this is called the valorization of co-products.
